Chipotle Chicken Salad



In an effort not to heat up the whole house, as well as eat a little more healthy, I made this for dinner when Alan was running out the door for work. Even Mason ate it up! I suppose his portion was a little optimistic, but I've been a stickler for Mason eating the same things the grown ups eat. As a result, he loves all kinds of foods typically not included in little kid fare and I'm so grateful for the friends who have given me ideas on how to encourage this and have helped me along! It's starting to pay off.




Serves 4 in Time: 30 minutes



4 boneless skinless chicken breasts
1/4 C. bottled chipotle marinade
1/2 C. chunky salsa
2 Tbsp. fresh cilantro, chopped
2 Tbsp. bottled chipotle marinade
2 Tbsp. olive oil
Grated peel of 1 medium lime (approx. 2 tsp.)
Juice of 1 medium lime (almost 1/3 C.)
4 C. torn romaine lettuce
1 C. frozen corn, cooked and cooled
1/2 C. red bell pepper, chopped
1 can (15-oz) black beans, drained and rinsed





-Place chicken and 3/4 C. chipotle marinade in a plastic bag and turn to coat. Seal bag and refrigerate 20 minutes-2 hours.
-Heat grill. Remove chicken from marinade and discard marinade. Place chicken on grill and cook, covered, over medium heat for 10-12 minutes or until fork tender. Remove, let stand for 5 minutes, and then cut into 1/2-inch strips.
-In a small bowl, stir together salsa, cilantro, 2 Tbsp. chipotle marinade, oil, lime juice and peel. In a large bowl, toss lettuce, corn, pepper and beans; toss with salsa mixture.
-Divide bean mixture among serving plates and top with sliced chicken.



*This claims to serve four, but as a main course salad it served the three of us comfortably. The recipe states you can add avocado as desired and that sounds so good I will probably try it next time. Also, I don't like bottled salsa, so I used more of the fresh salsa from Harmons. It was great in this, but really spicy.
